getting back to UNO-
One variation I like is when someone lays down a draw 2/4 card, the next player can trump it with the corresponding amount of cards. For example, if someone lays a green draw two, the next person can lay two greens. If someone lays a draw four, you must wait to find out what color they call, cause if the next person has four of that color they can play them.

you'll need to register for this one but that site is definitely worth perusing about, especially if you have good intermediate students.. I had another really good one but I can't seem to find it.
