I love it all in different situations. Old, stinky is better fried and in my shin ramyun...the fresh stuff is good all the time, EXCEPT when it has raw shellfish in it...that just makes me turn green (isn't that a health hazard anyway??). O-i kimchi is awesome too.
I was so glad when I saw that the Korean convenience store on the corner here in Boston had both Shin Ramyun AND those little individual servings of kimchi in foil bags.

I love mul kimchi- reminds me of sauercraut.

I was given some kimchi at a party recently- homemade radish with ray- awesome. This thread reminded me I still have some in the fridge- so I'm eating it now. Mmmmmm Mmmmmmm

I'll eat it if it's there. I do like it slightly warmed in ramen, or grilled alongside galbi, though.

My local kimbap place does fantastic kimchi, surprisingly.

It's good stuff. I eat more vegetables in Korea than ever before in my lie, thanks to kimchi. If only my mother had thought of soaking my vegetables in brine, adding red pepper, garlic, and fermented shrimp, burying them in the ground I think my childhood would have gone much more smoothly.

Good stuff, just not with every meal.

Does kimchi stay forever in the fridge?

I found some old stuff and I assume it's still edible since it's old in the first place.

I want to fry it on the pan too... I don't want to die while eating kimchi. Haha.

oh you'll know for sure if its bad, it smells putrid and there will be lovely white/yellow/green mold growing on it Wink

when the kimchi in the jar starts to bubble is when you should cook it asap in jjigae or buchimgae or rice or something, leave it a few days later and you will get a nice science experiment Laughing
