I am currently in Korea and will be changing jobs. I just ordered copies of my transcript. What does "stamped" mean? When I came here originally, I had to have everything notarized, etc. Will the notary seal on the sealed transcript be acceptable? Thank you.

Stamped means it needs a university seal or stamp on the flap of the envelope and usually a signiture of the person stamping it....

So probably, what you have described is not sufficient enough but who knows, immigration changes their rules everyday and from location to location.....................

Your envelope needs an official university seal on the flap. That means the uni seal must cover the crease of the flap so as to show the envelpoe has not been opened. My uni signed and dated next to the official seal. Immigration was happy with it.
