Stir-fries are a quick and easy supper, but you need a good, tasty sauce and a variety of sauces keeps the monotony out of using the same ingredients.
One of the sauces I like to use when I want some chicken or pork in my stir-fry is:
2 T vinegar
2 T soy sauce
2 T sugar
1 T grated fresh ginger
2 cloves of garlic, minced
6 T chicken stock (or water)
2 T corn starch
This one really perks up the meat and veggies.
For the chicken or pork, I cut it up into thin strips and marinate it while the rice is cooking.
Marinade:
1 egg white
1 T rice wine
pinch of salt
1 T of cornstarch (or flour) |

I buy a jar of Lee Kam Kee's Garlic and Black Bean Sauce from HomePlus and put that in, adding green onions and a bit of oyster sauce to boost.
I am a true Hong Kongese at heart, CONVENEINCE is key, my friend. Haha... |
