I don't its the combination of the fat the skin and the lean that makes it soo delicious. Hence the Korean word sam meaning 3 layered meat |

I had heard the literal translation was "three fatty layers", but that was some time ago and may not have been reliable. |

I like cooking meat with the fat on as to flavor it, but I can't eat the white fatty parts. I always was picky about this with meat ever since I can remember.
I don't see how anyone can stand chewing and swallowing that nasty squishy fat. I always did cut off the fat after cooking it or separate it to eat the tasty meat morsels.
I heard that there is 75% lean pork available and then there is the 40% average crap fare that has a few tasty scraps of meat in it.
I think I would take advantage of the fat if I were starved and very poor in a situation where every source of available food energy was important to survival. |

Actually its not as squishy as you think. Its more crispy. I'm actually a big fan of fried pig skin. I believe they call it dejechi coptagie. Last night a scolded a fellow foreigner for cutting the fat bits off of Possum. |

I don't even eat it. It's grilled fat and no taste. I have no idea why Koreans think this is some form of food as high art. Kalbi is far better. |

Trimming the fat off samgyopsal leaves you with what? A sliver of gnarled pork and pieces of gristle.
Do you scrape the frosting off cake?
Koreans love that fat so much they created ohgyopsal. They eat what they want, as much as they want, whenever they want, and they don't get fat. And they're not calorie-counting maniacs either. |

Pork like that should be cooked until far past the chewy and squishy stage. |

Every Sat I have it with fried Kimchi. God it's so delicious. But I have to fry it myself cause if it's not crispy it's not cool. |
