I will be leaving for South Korea for an esl post. How much US dollars can be brought into South Korea and in what form: travellers checks, cash etc? |

You can bring in up to US$10,000 (currency or negotiables) without restriction or declaration. You can wire in as much as you want ($millions more than you have I expect).
If you are just coming as a teacher you only need enough to get you through the first month - about $1000. Just bring cash. It is only 10 pieces of paper (10*$100) and will be easy for you to convert to won.
Convert your money AFTER you get here. You will get a much better exchange rate than you would buying won at home.
You should have your bank account set up soon after you arrive so it is not as though you have to keep it in the freezer or anything.
