| I love this stuff and the crap makoli they sell back in the states in bottles doesnt do it for me, anyone know where I can find out how to home brew it? |

Makkoli's great. Haven't made it myself though. I've heard that recipe's are usually family secrets handed down generation to generation. Of course, it's also made in factories too =)
Here's a recipe I found on the internet though:

1 package nuruk
2 1/2 cups cooked rice
1 1/2 gallon water (use good spring water)
Mix the ingredients. Put in sterilized container. Put the container in a
warm place (80F). The fermenting mixture will get very warm the second
day. Be careful that internal temperature does not rise above 95F.
Otherwise the taste will be acidic. Fermentation ends after 3-4 days. The
initial sweetness of the mix will have mostly disappeared. Rack or filter
the liquid depending on how thick you like your makkoli. You may want to
dilute the liquid with equal amount of water.

| I am trying to find this out too. I love mokoli. My wife's best friend's sister makes it for a living. I am trying to convince my wife to get her to teach me how to make it. My wife is pretty reluctant as she seems to think me having easier access to mokoli is a bad idea. If I make any headway I will let anyone interested know, but if anyone has a connection or knows how to make it post it up and do us a favor. |
