Apparently I'm supposed to start teaching after school conversational English classes in a couple of weeks time. Which textbook is the best for this and what exactly do you teach anyway?

Well, not sure what your school means by 'after school' etc, but in my BHS CA classes I never repeat what I do in my regular classes. It's hard enough just keeping them interested so you'll need to do something that is much more 'fun' orientated else they'll lose interest fast.

Games and stuff are probably where you want to be coming at them from for the first couple of weeks before maybe introducing a conversation book into the lessons later on.

I'm using this with my GMS at the moment, which is about right for their ability. You can pull lessons straight out of it in about 2-minutes flat. There's between about 7 and 10 lessons per unit, of which there are 10. So you've got plenty of material to choose from. Each lesson comes with pictures, dialogues and key vocabulary as well as some useful exercises etc although I tend to just focus on role playing etc rather than following each lesson to the letter.

There's also Book 2, which you may find useful, but it's obviously a higher level. Think each of the above cost me around 12,000 from Kyobo.

Additionally, here's a couple of activity books that you might find useful.

5-Minute Activities
Lesson From Nothing.

They're both really useful for pulling out quick 10-minute word games etc on the hoof. Most of which, are easy to remember and so you'll soon assign them to memory for later use.
