What's missing in every contract

Everyone here judges a contract by the salary amount (higher the better), hours worked (lower the better), pension, health insurance, holidays, severence, airfare, etc. But what i really see missing in every contract is the clause that protects the employee under default by the employer.

There are absolutely no provisions for:
-failure to pay salary or pay on time.
-conditions in case the hagwon defaults financially (bankruptcy)
-failure to pay pension
-failure to provide health insurance

As an example

"Failure to be pay salary within 15 days of the agreed upon pay date, the employee has an option to be granted a Letter of Release", etc ..... things like that.

What is really being signed is just "a lengthy job description", not a real contract in my opinion.
