Do any of you know of any bookstores in Daejeon with a decent selection of English books and/or books for learning Korean?

"Decent" is relative. Try Kyobo, down the street from Say Department store or English Plus, in behind Time World.

Keep in mind that Kyobo will gladly order books for you. It takes 7-10 days. The price you pay is what anyone would pay off the shelf here.
