I'm finishing my contract heading down to SE Asia. I bought a one way ticket from Seoul to Bangkok leaving at the beginning of September and I have an onward one way ticket leaving near the end of November. I'm planning on going to other countries so I won't be in Thailand for longer than 30 days at a time, just wondering if it will be a problem since my onward ticket is much later than the visa-free period. Worth getting a visa beforehand?

If there is a problem, the problem will not be with Thai immigration. The problem will be with the check-in person at the Incheon Airport. Some airlines, check-in people, on some days, will ask to see the onward ticket before letting you check in. This is to make sure the airline has no responsibility in case you were rejected by Thai Immigration (which you won't be).
You either need to get a Thai visa ahead of time; or come up with some clever back-up plan in case the check-in agent gives you a problem.
Maybe go ahead and plan you first excursion out of Thailand with an Air Asia ticket to Cambodia or Myanmar. Buy that ticket (pretty cheap) and have it in hand when you head to Thailand.

I don't believe it will be a problem as you already have an onward ticket. Be careful, though, that your plans don't change and you find yourself exceeding more than 90 days within 180 days in Thailand. This could cause you headaches if not problems requiring you to get a "real" visa for any additional time you would want to remain in Thailand. Yes, it's confusing.
