Id love to know this as well, and spent well over a year trying to get my hands on them. I have asked many guys at emart about what they do to make their sausages, and heard they use collagen casings, but would not tip me off to the supplier. I've asked the ladies who sell hot steaming soondae in the traditional markets and restaurants where they get the casings (those are natural) and noone can tell me, which leads me to believe they are not actually making soondae at all and selling up steaming store-bought packs. Ive asked butchers in various butcher shops about it, and they have no clue.
I went to a slaughterhouse and bought a 10,000won bag full of hog intestines and made an attempt to harvest my own natural casings. Needless to say it didnt go well.
I even went to that chain restaurant that rhymes with "the pill" that supposedly makes its own fresh German sausages. Turns out they know nothing about casings and I even got a guy there to show me their shipping orders..no casings to be found so....
That guy Gavin (I think is his name) that runs a butcher shop in Seoul and sales British sausages may be able to help. I remember sending them a few emails requesting info about where to get casings a few years ago, but never got a response.
Again, if you find a source (natural or not) please let me know~~ |

sounds like it's one of those enigmas people aren't to know in South Korea. Well hope you find it or if I find it, I'll post it here.

I guess for the bigger sizes you can find some places in Itaewon, but for the small one's pretty much any corner store will do. Personally, I think the Korean sizes are just way too small for comfort. |

I buy the collagen casings from ebay and have them shipped. Pretty cheap as they weigh next to nothing. |

I've never bought sausage there because it looks weird and I'm used to southern sausage with some flavor, but it might be useful to stop by Chef Meili's place in Itaewon and ask where he gets his equipment. He's from Austria, so close enough, I guess . However, trust might be a factor... since I swear I've ordered the same thing multiple times with a 5000 won price variance. I'm not a fan of that place but he has good sandwich meats so I run through there every now and then. |
