A question for those who know. If you and your boss agree to changes in your contract after the E-2 visa is issued, would the amended contract have legal force?

If you both sign and stamp it, of course it can be amended. Contracts are written in stone, hopefully.

It seemed logical that a contract could be amended, but some aspects of living and working in Korea seem to defy logic.

Thanks for the prompt response.

True, but in this case contract amendments are covered under contract law. The amendment is signed by both parties and it supercedes any other agreement you have with the school.

Also, an employer can't say "Sign this new agreement, or you're fired". Pagoda tried this 3 years ago and it backfired on them when so many refused to sign it.
