If i am extending my current contract for a little extra time (1.5 months) is it as simple as my boss going to the immigration office (without me) and signing a form with the new contract end date?

You need all the paperwork exactly the same as the last time. Bring your passport & paperwork. Pay around 50,000 won wait 15minutes to 1 week and get your passport back.

Simple

But what I'm wondering is - can my boss do this without me going to the immigration office? He is very adamant about talking care of it without taking me with him (because he lives close to the immigration office, he says it is more convenient that way) and I have no reason not to believe him, but it just seems too simple (and I am suspicious by nature, I trust no one, haha).

Probably yes. My wife regulary does VISA stuff for her boss... she works for a trading company and is responsible for foreign staff VISA's.

She goes alone and takes care of everything.
