Side by Side and Expressways are great for simple conversations as it allows students to just plug in the blanks for their conversations. This is really useful for middle school students.

Interchange works well with higher level students or adult conversation classes, as it asks more opinions, and the readings are harder.

In my situation now I use Side By Side in my 3rd grade middle school classes.

For high school or adults Interchange wins hands down.

I've used them, and they're both good, but I think Touchstone is a little better, and Top Notch is much better.

I never really liked the Interchange books, Click English is an older book and not going to last the whole semester. However, I like their layout. It combines pictures just like Side by Side and also focuses more on grammar. Side by Side tends to "fill in the spaces" near the end of the chapters with unrelated tidbits. Students don't seem to care about it.
