When, if ever, do you capitalize the word math? Or does it not get a capital, such as English, because English's proper noun is England?

In general, they're not capitalized unless they have to be capitalized anyway (e.g. English, Spanish). They are, however, capitalized if they're followed by a number because then they're considered specific names:

I'm in History I.
I'm in Geography 101.

but

I study history.
I'm in geography class.
