I'm looking for something small and portable (no frills or video playback). Size isn't too important--something in the way of 2~8 GB. Any recommendations?

I bought the Samsung P2: mp3, video, touchscreen, FM radio, .txt reader (save any .pdf to text and read a book on it!), mic recording, picture viewer, bluetooth. Mine is 8 gig, though I hear a 16 gig is coming out. It's small, but has a decent size screen for viewing, and is all around just freaking cool!

Be careful about the headphones you buy; there can be a serious loss in sound quality and quantity with bluetooth. I bought Jabra headphones and I was totally pissed that I had to turn them all the way up to listen to my music at a decent level. Check out Motorolla S9HD (I think that's right). It's an updated version with some SRS sound function. Test the headphones before buying is my advice.

EDIT: sorry, just saw the no frills request. Samsung also has a T9, and some other smaller ones in the lineup, so hope it helps.
