My e2 visa only states a final entry date of one year from the date I was issued the visa, there is no expiration date. My visa stamp when I arrived in Korea is a week later and there is that date stamped and no until date.
I'm wondering when my e2 officially expires?

Take a look at your arc card. |
ARC card has the date you need to be out of the country by, look there. |

YOur question is indeterminate based on your information.
Your ENTRY privilage usually expires 90 days after issuance.
IF you are American your RE-ENTRY privilege should expire one year AFTER your entry into Korea on the visa.
Your working status (status of sojourn) will expire one year from the initial date of entry unless you extend your status or change your status during your period of sojourn.
After you have entered Korea on a work visa you have 90 days in which to register as a resident alien (get your alien registration card - ARC) .
This will have your required EXIT date on the face of it. |
