If I need to get my F4 renewed while in Korea, do I need to supply all the crazy paperwork I had to when I first applied for it? Or do they just look and make sure the visa I have is valid and issue a new one on the spot?

Easy as pie.
Go to your local immigration office and pay 30,000 with the proper documents.

It took me less than ten minutes and they usually just give you an extension up to 5 years of your arrival in Korea.
