Chinese visa - do I need a return flight?

After my contract is up in July, I am planning to travel to Europe via Asia. I had wanted to go via the Trans-Siberian, but now I'm thinking that I'd rather go Beijing - Xian - Urumqi - Almaty (Kazakhstan) and from there to Moscow.

I had heard that last year, it was impossible to get a Chinese visa without showing a return flight because of the Olympics. I am wondering if this is still the case. If I am leaving China by train, then this will be impossible.

Also, where is the best place in Korea to go for a Chinese visa? And how far in advance would I need to do it? I am an American, btw. And yes, I already know that it is more expensive for people from my country.
