Now there are two questions here

1. I noticed you can get buckwheat noodles here at most restraunts. They come in a cold sauce with chili pepper sauce and cucumber/radish. Are those real buckwheat noodles like the Japanese "Soba" noodles or are they mainly wheat noodles with a little buckwheat in them? The reason I ask is that I am trying to eat more complex slow burning carbs which buckwheat is great at!

2- Can you buy whole wheat pasta here? I checked costco's and it was a no go.

Korean buckwheat noodles, or 매밀, are identical to soba as far as my pitifully unsophisticated palette can tell.

Whole wheat pasta is available at Hannam Mart, near Hangangjin Station in Seoul (next to Itaewon. line 6). It's not any more expensive than bleached flour pasta either.

There are three exits: take the one on the right as you leave the station (it's the only one on that street). When you go around the bend in the road, there will be a walking bridge. Cross the street on it and turn right. When you get to the Volvo building and see a big bowling pin, you're there: it's right before the Volvo dealership and in the basement of the building with the big bowling pin.

If you've got a Home Plus nearby, it's possible that they carry whole wheat pasta. I say that only because the one nearest me carries, as does one of the many Lotte Marts.

I think most of the Lotte supermarkets carry whole wheat pasta as do the Shinshegae supermarkets.

For sure, the Lotte markets at Gangbyeon station (near the East Seoul bus terminal, line 2) and Hanti station (line Cool and the Shinsegae at the Express Bus terminal (lines 3 and 7)

The Well Being Mart at the foot of Kyung-lee Dann (just across the street from the Haebanchon kimchee pots) carry buckwheat noodles.

The protein content on the buckwheat noodles is like 10g, I substitute them for pasta in my Italian recipes and they are surprisingly good as long as you don't overcook them (they need about 3-4 minutes only) and reserve some of the cooking liquid to add back for moisture.

I found whole wheat pasta at Homeplus.

Hmmm buckwheat and Italian dishes actually sounds like an interesting combo that one has to try. Buckwheat is definately healthier because it varies diet as we mostly dependent on regular pasta. I think it would a very earthy and hearty flavor to it.

The taste of buckwheat is so distinct... the aroma would actually go well with a basil red sauce and a little bit of pepper. And I think the texture is rougher would go well with absorbing the flavors of the sauce.

Although, I have hard time imagining it with a creamy white alfredo sauce or antipesto... Actually even with meats I'd imagine soba to be a little strange, but vegtables in general I think would taste good.

PS. .... must... buy.... buckwheat.

Totally! I make it with garlic and oil, tomato sauce, meat sauce, lentils with tomato and spinach, crab and chili, assorted bits vegetables leftover from various other dinners. Also, an expensive block of grana or parmesan goes a long way and makes a world of difference.

It's really better than you'd think, and my boyfriend and I are both 1st generation Italian (and my dad's a chef), so we are hard to please.

I want to start using it in Asian recipes, something besides the standard cold version with dipping sauce.

Does anyone know the ratio of buckwheat to wheat in those noodles? Can you buy 100% buckwheat?

Korean buckwheat noodles all have wheat in them (at least that I've found). The Daejeon type are noted for having a higher percentage of buckwheat - up to 90%. The only pure buckwheat noodles I've seen are made in Japan - they cost like $4.00 per half-pound in the USA - I've never seen them in Korea.
