If anyone is trying to do so (this applies to EPIK only as far as I know)

I called the Korean Consulate General in NYC to double check what documents they need from me so that I can get my E-2:

-your passport
-visa application form
-passport sized photo
-your notice of appointment from EPIK
-your signed contract
-a photocopy of your diploma (apostille not necessary)
-a sealed transcript
-payment of 45.00
-self addressed /stamped return envelope

I am only posting this because on the consulate's site, they do not mention the need for a diploma copy or transcript.

Hope this helps somebody. Karma has been kicking my ass lately.
