I live in a rural town that has a ton of butchers, but I can't find the right cut of meat for a pot roast. Tried pointing to a picture of a cow etc. and they just shook their heads. Went to Homeplus and anything that was a sizeable was priced really high.

Just want beef chuck am not picky about the cut. Does anyone know the korean word I need to say to get one from a butcher?

I made one last winter from what looked like a flat iron steak, found at EMart/Homeplus/wherever butcher. It was considerably smaller than a typical pot roast so had to use more potatoes and veg. Or I guess you could get two if you're feeding the masses. Anyway if you find the flatiron marinate it somewhat longer, as it's a bit tougher than other chuck cuts otherwise.

It made a good roast though, with the exact same texture and flavor as usual.
