She has a spousal visa (sponsered by my univ/employer). She wants to do some graduate work here in Seoul. Can she do this with the current visa or must she change over to a student visa?

You must really ask Immi this question. Of course, then, there are as many answers as there are Immigration officers (or more... depending on their mood at the time.)

To be on the safe side, have her apply for permission to engage in activities beyond the limits of current status... and see what happens.
