He does a lot of youtube videos about foraging for wild edible plants. Is there anything like this in Korea or a book about it?

I think you just need to talk to a few 할머니's. They are always outside picking weeds out the ditches and along side the roads. I was camping a few months ago in Gangwondo and there was a 할머니 there that was sleeping at the bus stop. She said that she moves from Seoul to that bus stop every summer. Each morning she would go hiking through the mountains looking for wild mushrooms, ginseng, other stuff i had no idea what it was, etc and sold it to the hikers as the came back to their cars. I would bet that she knows just as much about edible 'weeds' as this dude.
