So my contract is up in May, but my school says its no problem to extend until June. Thats easily done at immigration? And I'll need a day or 2 after my contract is up so will my visa allow for a couple days past to settle my affairs? I heard you can get a grace period as long as you ask for it?

Yes, it's very easily done. They will just stamp the back of your ARC with your new expiry date. Don't worry about it. I've done it a few times myself.

If you already have your flight booked just have them end your extension on the day of your flight. If not, then you can go to immigration in the month prior to your flight to get a flight extension which will allow you to stay in the country (but not work) until that date.

Whatever you do, don't stay past the date on the ARC or you could face consequences. Always get an extension, even for one day.

Right. You can get fined even for one day. Don't listen to other posts that say it is okay to stay after a few days. I have been fined for this, as well as one of my friends - 100,000. I left one day after, and my friend 6 days.
