I am moving to Korea in a month or so. I have about $1500 or so. Should I bring a giant wad of won or should I just bring some cash and wire the rest if I need it? Which would screw me over less on exchange rates?

bring the stack. wiring money here without a bank account is a pain in the ass and you can be screwed out of 100 or so each time you do it.

Traveler's checks. You get a better exchange and they're safer to carry.
