I know Songbird supports iPod, or has a plugin for it.

I use floola
http://www.floola.com/modules/wiwimod/
on my old 4th gen classic.

It doesn't support touch or iphone, though.

For these programs, do you have to delete the itunes app from your computer in order for it to work?

I use winamp with my ipod touch. Works well, with the exception of video.

If I want to use these with my iPod touch, do I need to jailbreak it first?

I think Songbird would have no problem cooperating with an ipod touch. I've used songbird and itunes concurrently with my nano.

Not to get too offtopic but does anyone know the name of the program that goes through your library and rearranges the id3 tags so that they are all correct?
For example it will take all of the Jayz, Jay-Z, jay z, songs and relabel them as Jay-Z. It also is supposed to be good for fixing "unknown artist" and "track01" problems.
I saw it on the tailend of a recent Tekzilla episode, but I can't track it down again.

Lifehacker, gizmodo and engadget are good sites to look at tips on that sort of stuff.
