I'm returning to the U.S.A. soon for some job interviews (Keeping my fingers crossed; can't believe I was even able to secure a few interviews from abroad in this economy).

When I return, I'll need to rent a car, and the car rental places I've spoken to want me to see my U.S. Driver's license upon rental.

I gave my U.S. drivers' license to the Kangnam DMV when I got my Korean drivers' licence.

Can I just show up, give them my Korean license, and get my American license back in exchange? Or do I need to show them proof that I'm leaving the country? If so, what do they need? E-ticket printout? Something more substantial?

e-ticket, ARC and patience while they pick through the box of licenses to find it.

I'm lucky then. I have both. I didn't know you had to submit one.

Don't mean to hijack the thread, but I need to do the same thing with the Ansan DMV.

I'm not returning to my home country though, I'm headed to Japan and have a return ticket to Korea booked three months after I leave because I plan to come back and visit some folk.

Will they get all fussy about that? My friend told me the only way you get your license back is if you book a one way ticket to your home country.

I can get some kind of Visa cancellation forms if that would help...

I don't know what state you live in, or whether you need your license right on the day you get home, but, I live in WA state and I was able to request a new license mailed to my house online. I ordered it a week before I got back home and it was there when I arrived. Maybe something you could look into.

No appointment needed (just get a number and wait in line) and they won't care if you are coming back - you can't get a Korean IDP so you will need your foreign license while you are abroad.
