I would like to make some seafood gumbo, New Orleans style.
Specifically, can okra, and file be found in Seoul? If no file, is there any substitute I can use to make the roux? |

I've never seen either ingredient anywhere in Seoul. Gumbo would be FANTASTIC and Koreans would LOVE that spicy food. |

A roux is simply equal amounts of flour and oil stirred over the stove until brown.
The fil is a different story and could take a while, cheri. The journey to authentic gumbo in Korea begins: Find the best Korean english speaker you can and see if you can get the words "dried ground sassafras leaves" or "powdered sassafras leaves" translated and written down to take to the market to try to find gumbo fil or fil powder.
Ask to have "okra" and "frozen okra" translated for you while you're at it.
Or, you could find out if sassafras is indigenous to Korea (sorry, don't think so), wait for summer to start hiking to find some, and make your own.

Interesting tidbit:

The fil must always be added after the pot is removed from the fire. If allowed to boil, it becomes stringy and unpalatable. Okra and fil should never be used together in a Gumbo or it will be as thick as mud. The Creoles in New Orleans used fil only in the wintertime, when fresh okra was not available but many Cajuns prefer fil gumbo year-round. |
So, finding one or the either should be sufficient for your quest. Next? Find the french bread!
More on how to make homemade gumbo fil. (If you're east of Texas, that is.)
