First you twice said "if I give a notice" then you said "since I gave the notice at the 5 month mark?"

Which is it?

Stick it out until you've been there 6 months so there isn't any doubt. Actually, you should stick it out until the end but get them to put the other school's address on the back of your visa to make it legal. If they do this then everything should be legit, you'll need to go to the Immigration office with a permission document from whoever is supporting your E-2 to work at another location/for another employer. Your other employer should also give you a document to take to Immigration. I'll assume you'll be able to work out the correct pay with both.

Call the tax office(English phone line) and ask them about the payslips, they will tell you payslips must be given to all employees. Do this at work near your employer, don't tell the tax office who your employer is but while talking to them ask your employer to get on the line and listen to what you're being told. Just an idea, it may not be the best, depending on your situation, office phone location etc...

Payslips should have the employer stamp/dojang on it, or have them e-mail them to you as long as their e-mail address can be verified/found on company website, business card, or...?

Nobody you work for will be perfect, suck it up.

It sounds like a hagwon? Do they pay you for travel? If it's not too far and they pay for your travel do it, just require them make it legal. Tell them you'd rather not report them to Immigration and plead with them to do what is necessary to make it legal. Then ask them the next day, ask them everyday, tell them kindly everyday when you arrive and before you go home, call them if you have to, that you are very concerned about working illegally.

Any e-mail correspondence(leave notice) should be written/Cc'd to yourself.
