My school decided to end the contract early for reasons I have yet to decipher, but they're willing to give me a good reference, a letter of release and transfer the visa. I've approached a number of recruiters and some say I can only transfer my visa after 6 months of working at the same place, and others say I can transfer it as long as I have a letter of release.

Can my visa be transferred if I've only been working for 1-2 months?

As long as you have the letter of release it should be no problem to transfer.
