Has anyone left Korea without cancelling their E2 visa, go home, find a new teaching job, then try to get a new visa? Or do you have to wait until the 12 months is up?

If you just "left" (like a MNR) without canceling it you will have to wait till it expires. You simply voided it by leaving but did not in fact cancel it.

If you took the time to get it actually canceled by going to immigration and telling them that you quit then you can get a new one.
