Has anyone else noticed a seemingly growing trend in mexican restaurants in Korea.... cabbage? Although it is my understanding that cabbage is sometimes used on seafood tacos, it is not something that I am used to eating on a taco or burrito.
Any thoughts on why mexican restaurants in Korea might prefer to use cabbage instead of lettuce? |

Yeah, they dump it on the burritos and tacos at Dos Tacos. Iceberg lettuce is available in Korea, but they don't use it.  |

Tomatillo doesn't do that. If they did, I would resort back to only making Tex-Mex at home. Cabbage....sacrilege |

One of my favorite taco stands in California (Taco Del Rio) also uses cabbage on all their tacos. So, it's not unheard of. |

it doesnt hurt much in my opinion. my problem is burritos that are 90% rice and the fact that nobody here knows how to cook carne asada. it really isn't that hard, or expensive (skirt steak isnt that pricy of a cut), if you're doing it in bulk. |

in L.A. Roy Choi started doing that with Korean tacos and the Kogi truck became a huge deal with 2 hour lines. Other Korean groups opened Kogi-rip off taco trucks to compete and they all use cabbage in their tacos (they are named Calbi, Bool, etc.). That's probably where they came up with that idea. |

Are most of the customers Korean? Also, cabbage is grown here in quantity and cheaper than lettuce. Koreans prob don't mind or know the difference. |

no they are white hipsters coming out of bars in Hollywood, donwtown, venice. All the people who run them (except for Kogi) are Korean FOBs. Korean BBQs in L.A. are full of fat white people these days because they are "All you can eat" so the trucks cater to this and call them Korean BBQ burritos, "calbi" tacos, etc. They all use cabbage in the mix. It's actually a good idea because its lighter and it doesn't absorb the korean style sauce (which is usually a mixture of chili oil and sesame oil) |

same reason most tacos in the US are drenched in sauce and 'cheese' Appeal to local tastes. |

One of my favourite Mexican dishes has cabbage on it. It's not unheard of in western Mexico cuisine. |

I haven't noticed "western" cabbage, which is what I see in the Mex food, being cheaper than lettuce here. Chinese cabbage, sure. |

It could just be a matter of looking at pictures of meskin food and not the actual recipes, as would the case of people getting nachos with either a)mayo or b)whipped cream on them since it looks like that in the pictures. |
