Can't say I ever really cared for him too much. Not that he was a bad actor(he was pretty good), just that I usually didn't like the characters he was playing, even when he was playing people who were supposed to be likable.
Also, I kind of associate him with Atom Egoyan, whose films I find somewhat pretentious and unneccessarily convoluted. (I get the impression that Egoyan starts off writing a script about something, decides to change the subject matter halfway through, but doesn't bother pruning off the stuff from his original draft. But that's a topic for another day.)
I did rather like Chaykin's performance as the New York cop in The Art Of War, about international intrigue between China and the west. "I don't need a fortune cookie to tell me someone wants to disrupt this UN trade deal." (In the film, the UN was implausibly portrayed as one of the parties to an international trade agreement.)
