Can I extend/renew my contract for 6th more months instead of a year? For example, if my contract ends in Aug, is it possible to extend to the following March?

Also, will this change my renewal benefits (plane ticket, bonus pay, etc?)

Can you = yes.
Will your employer (I assume you are at a public school) let you = unknown; some will, some won't.
If you are at a hagwon it is again negotiable.

Will it affect your benefits = contractual matter - you get what you negotiate; but it would be the same as if you quit at 6 months if you are on the typical public school calendar (you would get your full benefits at the end of the initial contract).

How does an E2 Visa work in this situation?

Does immigration extend the Visa for the 6 months?

They extend the ARC (note the change on the back) and update the computer files to match.

You need:
passport
ARC
new contract with end date showing.
application
fee
Guarantor form from employer
business registration from employer.

AND
If you have NOT submitted your degree with apostille (used your original) you will need to deal with this.

AND
If you have NOT submitted a NATIONAL background check you will need to do so.

AND
Any re-entry privileges you may have had will NOT carry over into the extension. If you plan to travel abroad you will need to get a re-entry permit as well.
