Is there any way that an employer could find out that a teacher quit a job by using a third-party company to conduct a background check? Could they just use the passport number to look into the previous visa and contact the previous employer?

Well first off. They already have access to two pieces of information t see if their problems. Your resume and your passport (if they get a peek at it long enough and before it is renwed). Now some schools/people are not that thoughtful while others are going to be cunning and devious enough. a school might be able to do the math is hey Steve has a gap of a year in this resume. What was he doing during that time? Or hmm Sarah has a Visa stamp here that is for a school she did not tell me about.

Now as to other ways to check. Maybe the school might ask immigration about said teacher. But I think that is not so easy. Officials like to be secretive with their information. Of course that does not mean they are not willing to share it with the right person for the right reason (money, friend, smooth talking).

Your references. Your references can easily bad mouth you as they do not have to face you afterwords most the time. They can also easily spill information you do not want them to say. "Oh Steve is a great teacher but he had a few hard months the first time he was in Korea, the school he was at mistreated him" "Huh I thought you where his first school".

The Internet - Some proper searching and being part of the right group or organization can get a school information about a teacher.

Also remember some schools might ask for a Korean criminal record check. What shows up on that I do not know but if you got into legal difficulties it might show up. School accuses you of theft some charge gets on your record. Now not all schools get or ask for that.

Still overall the bigger the organization the more likely they will look into you. The smaller the more they just do not care. All they care is are you breathing and do you fill in enough qualifying vapid characteristics (white, blond, young ,etc).

Believe me I know of one teacher if the school had done a simple google search would have found that teachers facebook and enough material to go next. But Koreans do not use google they use Naver and it has to be in Korea. Have you done a name search of yourself using Korean search engines.

Good Luck
