I keep hearing that kimchi is good for health and that cabbage is loaded with vitamin C. I just want to know, is it good for me or not? Should I make it a habit to eat it at home and at restaurants every day? This is not a question about "I hate Korea or I love Korea" but more about making kimchi an everyday food because it has health benefits. Does anyone have opinions that have some relevance with this subject. Remember, many others will read this. Try to make responses relevant and important to newbies.

Cabbage is already loaded with vitamin C even before it is turned into kimchi. In general, the health benefits of kimchi are mainly due to the vegetables - fibre, minerals and vitamins. Turning vegetables into kimchi adds salt, potassium and capsaicin among others, but you'd lose nutrients as it ferments in that acid bath. There's possibly a gastric cancer issue as well with kimchi.

Just eat more fruits and vegetables everyday and you're on your way to a healthier lifestyle, whether it be a salad or a moderate helping of kimchi side dishes. I'd say that fresh raw vegetables would be healthier than kimchified ones, and salads agree with a wider variety of foods and are friendlier to the palate.

I think it's pretty good for you overall.

Plus, it will stop all sorts of diseases like avian flu and swine flu. Laughing

The B-vitamins actually increase with fermentation, kimchi provides some 12 amino acids, plus theres the goodness of lactobacilli & acetic acid for a happy gut.

But yeh its salty. If your diet isnt otherwise loaded with salt, a moderate daily intake of kimchi has far more benefits than drawbacks. Tasty too.

I agree, the only draw back is the sodium. Watch your intake in other foods or do what I do and offset it by drinking hella water and tea.

Bonus: Lots of flavor, not many calories!

Is it safe for me to assume you chaps already know that Kimchi is NOT some stand-alone salad like, for example, a plate of Caesar Salad?

Kimchi Chigae is the business!

I've only recently gotten into it as I presumed I wouldn't like it because kimchi makes me gag, but now I can't get enough of it! And its so cheap, they practically give it away!

Side note, the people who posted on the thread I linked above about spicy food being unhealthy are absolutely, indisputably, 100% incorrect. Spicy food is actually incredibly healthy for you. It also DOES NOT cause ulcers, contrary to popular belief, but in fact can help to alleviate the symptoms of them. Capsaicin is a wonderful chemical...

It's categorically not good for you because it's a highly salted food.

My Korean gastro specialist (well, he's not mine, he works in the hospital, but you know what I mean) told me the reason Koreans get 10X the usual rate of stomach cancer is because of these high salt foods.

Those saying kimchi is healthy are culturally persuaded into that point of view.

All the studies below implicate kimchi with cancer.:

[Co-carcinogenic
effects of several Korean food on gastric cancer induced by
N-methyl-N'-nitrosoguanidine in rats. Jpn J Surg. 1985 Nov;15(6):427-37].

[Diet and stomach cancer in Korea, Int J Cancer. 1997;Suppl 10:7-9]

[Dietary factor and stomach cancer: a case
study in Korea Int J Epidemiol. 1995 Feb;24(1):33-41]

[Effect of diet and Helicobacter pylori infection
to the risk of early gastric cancer, J Epidemiol. 2003 May;13(3):162-8].

[Dietary factor and gastric cancer in Korea: a case-control study. Int J Cancer. 2002
Feb 1;97(4):531-5].

[N-nitroso compounds in two nitrosated food products in southwest Korea. Food
Chem Toxicol. 1994 Dec;32(12):1117-23]

[ Determination of ethyl carbamate in some
fermented Korean foods and beverages. Food Addit Contam. 2000 Jun; 17 (6): 469]

Most recently, kimchi has also been found to contain parasitic eggs:

Korea FDA found 16 out of 502 domestic kimchi products containing
roundworm eggs. The products are from different companies. The parasite
eggs are believed to have come from excrement of cats and dogs raised in
the farms. [Parasite eggs found in's Korean Kimchi products. Asia Pulse
News, November 3, 2005 ] [ Kisaengchunghak Chapchi Action of serveral
chemicals on the parasites eggs and larvae in Korean Pickle(Kimchi) 1966
Aug;4(1):47-51]

This study implies kimchi could theoretically have an anti cancer effect

[J Med Food. 2003 Fall;6(3):151-6].
(not backed up by statistical instances of stomach cancer in this country)

Quote:
Nutrition and healthKimchi is made of various vegetables and contains a high concentration of dietary fiber, while being low in calories. One serving also provides up to 80% of the daily recommended amount of vitamin C and carotene.[citation needed] Most types of kimchi contain onions, garlic, and peppers, all of which are salutary. The vegetables being made into kimchi also contribute to the overall nutritional value. Kimchi is rich in vitamin A, thiamine (B1), riboflavin (B2), calcium, and iron,[10][11] and contains a number of lactic acid bacteria, among those the typical species Lactobacillus kimchii.[12][13][14] The magazine Health named kimchi in its list of top five "World's Healthiest Foods" for being rich in vitamins, aiding digestion, and even possibly reducing cancer growth.[15]

Kimchi jjigae. A popular stew made with kimchi, it is commonly cooked with kimchi, fresh vegetables and pork or tuna although countless variants exist. On the other hand, some research suggests that consumption of kimchi and other related fermented vegetable foods contributes to Korea's relatively high rates of gastric cancer.[16]

One study conducted by Seoul National University claimed that chickens infected with the H5N1 virus, also called avian flu, recovered after eating food containing the same bacteria found in kimchi. During the 2003 SARS outbreak in Asia, many people even believed that kimchi could protect against infection, although there was no scientific evidence to support this belief.[17][18] However, in May 2009, the Korea Food Research Institute, Koreas state food research organization, said they had conducted a larger study on 200 chickens, which supported the theory that it boosts chickens' immunity to the virus.[19]

so oddly enough it has health benefits but can have bad effects if you consume too much of it. How the heck did that happen????

All things in moderation. Cod liver oil is very healthy, but overdoing it can cause birth defects and bone issues. Some kimchi (from a trusted source) every day can be very healthy, if you don't get much salt in your diet otherwise.
