Can a 'one year' visa be extended by a few months?

My contract ends in May. I would like to apply for a university job for the Fall, but I don't want to sit idle for several months. Nor do I want to sign another year's contract....f my school agrees to it, can my visa (and period of employment) be legally extended for another few months.

Yes. It is exactly the same process as if you were renewing for a complete year. Just put the desired dates of your employment in the new contract. Easy as pie -- assuming your employer agrees to it.
