Is there somewhere I can get my fingerprints taken in Seoul, either on the weekend or before 9am or after 630pm during the week?

Pass and ID Services near the USO doesn't do fingerprinting for civilians anymore.

Thanks

Any police station in Seoul should do it. Just walk in with a Korean if you do not speak Korean. Otherwise if they give you a hard time call one of the "Gu" police headquarters and schedule and appointment--it's free.

I went to the Itaewon police station to get them done, but they said they couldn't do it. Maybe some stations can, others can. Administrative consistency is not a big thing here. Anyway, they sent me the Dongdaemun police station across from Seoul Station. If you're in Seoul I'd suggest just going there. Maybe things have changed, and now aqll stations can do it, but that's not my experience.

Doesn't anyone know of somewhere open on the weekend?

I've tried Yongsan Police station but they are only open 9-6 for prints so there is no way i can get over there with work.

Really need help figuring out how to get these prints asap so I can find a new job.

If I run and cancel my visa at airport immigration and go home, I can just start over submitting my docs again and get a new job right.

Just make sure they do it correctly and you see your prints or you'll be so mad when you get the rejection letter.
