Hey guys, I have an unlocked Samsung cellphone that I used in Hong Kong and I was wondering how I can set up a "pay as you go" service in Korea? I live in Jeonju
Can I just buy a card/chip from a convenient store and set it up instantly? (as I did in Hong Kong)
Or is it more complicated?

short answer = no.
long answer = do-able but more complicated than anywhere else and usually not worth doing. Buy a cheap phone (in Korea) for local use.
