is there some sort of official proof of employment (stating your start/finish date) than you can get?

I'm sure I read a while back there is some sort of document you are legally entitled to. Of course, quitting a PS job early will burn any bridges to getting any decent reference....so just asking incase it comes to that.

Korean translation of Certificate of Employment is 재직 증명서. Ask for that and your employer (past or present) is to immediately produce one and supply it to you. Make sure it has the red stamp on it.

You can produce one and give it to your employer to fill in and stamp or they can produce it for you. I would recommend that it be in both korean and english.
