Strange query....

But, which subway stations in and around Seoul have a bit of character and stand out from the others?

Chungmuro has an artsy feel, as does Hyehwa to a degree. Those kind of places.

Any other interesting ones?

How about stations that are the biggest pain in the butt? Dongmyo gets my vote.

The obvious one for my is Gyeongbokbung. It always has some sort of art exhibit, it is basically a museum and subway station.

Underrated one is Noksapyeong, station just is different from all others I've seen. Sort of a city in a bomb shelter sort of feel.

think there is even a wedding hall in noksapyeong station or at least they try and market it for weddings. really weird

I really like Noksapyeong. I used to live in HBC and I'd love when I had to access the subway from there. It has brilliant subway design.

The new addition to Seoul station for the new airport line is really nice.

There is a station where the ceilings look like rock which is cool.

I always like the above ground stations, especially the ones that are pretty high up.

There are a ton of stations I like, actually!

OP, are you looking for architecture or maybe larger stations with stores in or above the station? Some interesting stations could include: Seoul Station, Jamsil, Bupyeong, and, in a few months when renovations are finished, Sindorim.

Sindorim gets my vote for "pain in the ass". I seriously doubt that any renovations can make it better. It will might look a bit nicer but without extension it will remain way too crowded. One of the oldest subway stations and clearly wasn't designed for such amount of traffic like these days.
The other hellhole is Sillim. At least it fits into that area well since it's a big dumb around there.

I am looking for architecture and larger stations with interesting things in them....basically anything that is cool and makes them stand apart from your run-of-the-mill stations.

What are the special points about the stations you mention above? And what is happening with Sindorim??

Chungmuro station has parts that resemble a cave. Complete with fake rock walls and ceilings.

Chungmuro also has an art editing and resource library inside along with PCs for film/graphic work. I think they have small film rooms too.

Wangshimni has a mall attached to it.
