Well? I mean on the subway system.

I heard Bukhansan is pretty good but which is the best in terms of being picturesque?

There's a couple of good ones at NamSan. May not be what you are looking for, but great walks anyway.
Go to Chungmuro station (line 3 and line 4). Exit and look for the bus stop for the Namsan 02, 03, 05 buses. (Actually only two of those pass Chungmuro, but I forgot which 2). The stop is in front of a bakery, on the eastbound traffic side. All of those buses go up Namsan. You can transfer free to those buses.
Take whichever of those buses comes by, it will go to Namsan, and turn onto the road going up namsan, it will pass a national theater and go through a little guard gate.
Option 1. After passing the guard gate, get off at the next stop. There will be a pedestrian walkway right in front of you that goes around Namsan (not up). You can walk that to the end and it will finish near the Namsan cable car, walk downhill from there to get to Myong Dong subway station.
Option 2. After passing the guard gate, get off at the next stop. Take the road up the mountain. It is the same road that the bus is going up, but there is not much traffic since private cars are not allowed. Walk up to top of Namsan and take Namsan 02. 03. or 05 down depending on where you are going.
Option 3. Stay on the bus to the top of Namsan, take a look around and walk down the road going down. It is the same road that the buses are going down (not the way they are coming up. This is a beautiful raod in spring with cherry blossoms. Road finished at Namsan Library where you can bus to City Hall subway station .

What's the best route and how do I get there? Which subway station/exit?

And how long does it take from the subway station, doing the hike and getting back to the subway station altogether?

Depends on what shape your in. Bukhansan is slightly easier than Dobongsan. But they're both pretty steep with lots of up and down sections.

This is why we meet at 8am for an early start. We don't feel crowded until the final walk out of the park at about 12~1pm when most are walking in. I go even earlier when I go out alone. My best hikes have been when I start before 7am.

I recommend 구파발 station on the #3 line. Take a bus from there to the park entrance.

Forgot to mention earlier what I consider to be one of the lesser known treasures hiding in the park, 국녕사. Worth a trip. This blog has some pretty good pics of the park and temple pics are at the bottom.

I prefer taking the trail up from 백화사 rather than the main entrance because it is less traveled.
