[size=12]I am not clear on the tourist visa process. When i go to Japan at the end of my current E2 visa, can i simply return to the airport the nest day and return to Korea or do i have to visit the immigration office in Fukouka for an official stamp of some sort.

You are not particularly clear in your post either (despite the large font).
If you mean you are leaving Korea (turning in your ARC at passport control as you leave) and returning as a tourist then you need to do nothing. You will get an entry stamp as you pass through (Korean) passport control (immigration) on your return to Korea with your allowed period of stay (30 days - 6 months depending on your nationality).
If you mean you are on an E2 and going to Japan for your vacation then again, you don't need to do anything (except try to NOT lose your ARC).
When you return to Korea you will be given an entry stamp and your status will remain the same as it was before.
