My vacation is next week, and I've decided to spend it in Taiwan, since it's the only place I could get a decently priced flight to.

I'll only have a week. I'll be flying in and out of Taipei, and plan on spending at least a couple of days in the city. Other than Taipei, does anyone have any recommendations for other places to see, or things to do in Taiwan? Or even food to eat.

I'm not much of a party-er. I like nice scenery, but I'm not much of a hiker, though easy hikes are fine. I like beaches and hot springs, and I've heard that the latter are plentiful in Taiwan. I don't have an international driver's license. I'm a single female, and I'll be traveling alone.

I've done some reading and talked to my cousin who lives near Taichung but I'm also interested in the opinions of those who've also traveled Taiwan.

If you go up to Beitou, which is on the Taipei subway line, you can go to the public hotsprings. It's only a couple of bucks, but it has several nice pools to soak in. The area also has a lot of higher end springs. Make sure to check out the thermal valley, a little bit up the road, it was really neat to see the lake of bubbling water.

I went to Taiwan 2 summers ago and had such a great time that I'm going back again next month.
I'd suggest you catch a train from Taipei Main Station to Hualien on the east coast and go to Taroko Gorge. You can catch a bus from just outside Hualien train station. The buses aren't very frequent, but there's a great tourist info centre just outside the train station that can help you with the schedule. Taroko is very beautiful, and there are some great short trails you can check out.
There are also beaches all up and down the east coast that you could check out. They also do whitewater rafting out of Rueisuei, just south of Hualien, if you're interested. I haven't done it yet, but I've heard it's fun and in a beautiful area.
