It depends on where you are from but probably yes, you will needs visas or an e-visa (at least for Vietnam).
If you are American you can get a 30 day visa on arrival at the border going into Cambodia. You need a passport photo, a full page in your passport, application and US$20 fee.
Be aware that due to border clashes between the Thai and Cambodian armies last month some of the border crossings are closed and there are travel warnings for the border regions.
Also, be aware that if you leave Thailand and return via a land/sea border you will only get a 15 day stamp on arrival (not the 30 day stamp you get if you fly in).
