What is the best and most inexpensive way to exchange KRW to THB? Should we do it at a bank before leaving, at the airport here, or just take American money to get changed in Thailand?

DO NOT TAKE WON OUT OF KOREA.
You can buy a few THB at the airport in ICN (5000 THB will go a long way unless you are going 5*).
Beyond that, bring dollars to Thailand and exchange them here.
You can also bring your ATM cards but be aware that Thai banks will charge you b150 (about 5000 won) per transaction PLUS any fees the Korean bank charges you for international use (usually 1500 won) per transaction.
Credit cards work fine in the major tourist spots.

Greenbacks are boss. Euros if you got 'em.
