On my way back to the US I have a one-night layover at Narita, where I will be staying at the Marroad International Hotel Narita. I was planning on going to Tokyo for the night, I guess as late as the subway allows me to assuming it goes out to Narita. What should I do the one night I'm there? It will be on a Thursday night; I'm arriving at 4 pm and have an 11 am flight the next morning. I'm looking for insight on coordinating this - what time their subway closes, what tourist attractions are close to each other, etc.

No subway, but you can take the Skyliner train into Ueno/Nippori area. Plenty of cheap hotels around there too, which should make the return the next day easier.

Not sure of the early morning train times, best to check that out.
