Is it possible to get your E2 in the Korean embassy in Spain? Will any embassy do it?
I will have completed an extended contract by then. (16.5 months)
I know that you have to get your first one in your home country but what about subsequent ones?

Usually, yes, you would be fine HOWEVER there have been a couple of instances where you must be resident, not a tourist, in the country to get an E2 (Cebu K- consulate and one of the Chinese K-consulates come immediately to mind.)
